It’s taken me three days to finally do a proper count of my daily caloric intake, and now I have an answer as to why I’m so blasted tired.
My Live Below the Line menu of sushi, sushi, and more sushi is getting me no more than 750 calories a day. Three quarters of that is from rice. This is not healthy.
Add to that the need to work and by 2pm I’m practically falling asleep. It’s also our busiest time of the year for accounting, so having to look (and make sure I’m focussed) on numbers is a wee bit difficult. I also made the silly decision to try to work out when I got home this evening. That brilliant idea last ten minutes.
Upon making my dinner for tonight, I realized that I’ve run into an issue with my sushi rice inventory. Turns out that one bag is not going to last me 12 days. The remaining $4.84 that I have for my food budget will have to now go towards more rice for next week instead of a resupply on fresh produce. Thankfully, I found out that the bulk food store sells sushi rice (which will hopefully work out cheaper). I’m still doing okay for cucumber and sweet potatoes, and I can always portion out my remaining apples, mango and avocados. I honestly don’t think the blackberries will still be good past the weekend though, so that’s one thing I’ll definitely have to forgo next week.
Hell, if all else fails I may have to live off cucumber sticks and find something creative to do with all the nori I have left. Nori chips? I wonder if that’s even possible…
